Although the signing of the Declaration was not completed until August, the Fourth of July holiday has been accepted as the official anniversary of U.S. independence and is celebrated in all states and territories of the U.S.The holiday was first observed in Philadelphia on July 8, 1776, at which time the Declaration of Independence was read aloud, city bells rang, and bands played. It was not declared a legal holiday, however, until 1941. The Fourth is traditionally celebrated publicly with parades and pageants, patriotic speeches, and organized firing of guns and cannons and displays of fireworks; early in the 20th century public concern for a "safe and sane" holiday resulted in restrictions on general use of fireworks. Family picnics and outings are a feature of private Fourth of July celebrations

Sausage with Beans and Sage Recipe



Happy Halloween!
The frost is on the pumpkin and the witches are getting ready for the festivities! When the temperatiure turns cold, our cats, who spend most of the summer out on the porch or in the garden, want to come in and sleep under the woodstove. The garden is blooming with the mums and asters still escaping that hard frost. I am now getting ready to take a break from the gardening. There is nothing nicer than relaxing in front of the wood stove with a good book. -
When the temperatures drop, we also get hungry for something warm and savory to serve at suppertime. This is a recipe that my husband likes to cook. I will share a funny story with you about husbands and cooking. A year ago I purchased a cook book because I knew that we liked the style of food and that we probably had most of the ingredients to make the recipes in the book. One morning over his breakfast, my husband started to read the book. He became so hungry looking at the pictures and reading about the receipes. I came in that evening to a fantastic dinner all prepared. So ladies, if you want some help in the kitchen, this might be an approach you might use. Good luck!!
Saugage with Beans and Sage
  • 1 lb italian saugage - cut 1 inch pieces
  • 2 eight oz cans cannelini beans rinsed and drained
  • 8 oz diced tomatoes
  • 2 garlic cloves, crushed
  • 1 sprig sage leaves, chopped
  • 5T olive oil

Heat 3T of olive oi in the pan and cook the sausages over mdoerate heat until they are browned on all sides. Add the tomatoes, garlic and sage. Stir and bring to a boil. Add the beans and one Tablespoon water. Cover and simmer for 15 minutes, stirring frequently. Taste and season with salt and pepper. The consistency should be thick. Drizzle the remaiing olive oil on top and garnish with parsley and sage. This is nice served with a green salad. ENJOY!

Pamela and Eric's Holiday E-Diary


HOLIDAY
I look forward to this time of year. Getting together with family and friends is always a little more special. This year we found ourselves heading out to Seattle to visit with the West coast part of our family. We decided to take the VIA train across Canada.
..
The Silver and Blue, as this vintage 50 year old train is called, left Toronto promptly at 9 AM and delivered us to Vancouver, B.C. three and a half days later. "What a magical ride across the Canadian countryside" one woman from Rome exclaimed as she looked out the window. There were three skydome cars attached to the eighteen car train, and it was from there that we saw some spectacular sights.

The two engines pulled us through an area of 30,000 lakes in Ontario Province, dotted with numerous beaver dams, birch trees and small cabins.
